Tomato, Chilli & Basil Orzo
SERVES: 4 | PREP TIME: 5 MINS | COOK TIME: 20 MINS
INGREDIENTS
1 Red Onion (finely chopped)
1 Red Pepper (finely chopped)
5 Cloves Garlic (finely sliced)
Fresh Basil
1 Tin of Chopped Tomatoes
250g Cherry Tomatoes
800ml Vegetable Stock
500g Orzo
METHOD
Fry the onion and pepper on a medium heat in a little olive oil until softened and lightly caramelised. Add the garlic and chilli, cook for 1 minute. Add cherry tomatoes and crush with a heavy spoon or potato masher. Add the tinned tomato, stock and orzo. Bring to the boil and simmer for 9 to 10 minutes until tender. Finish with a little drizzle of olive oil and torn basil leaves.
